Easter Candy Cupcakes

For Easter 2013 I wanted to do something fun and cute for kids as well. So, I decided to put Easter candy that were in the shape of eggs on top of them. These simple but flavorful cupcakes was a great combination.
I started with just a simple plain white cake batter, very kid friendly.


I used the shiny silver liners, it works with the Easter candy colors. For the frosting I made a home made Key Lime frosting and it is tinted a light green. With the flavor of the white cake and key lime was really good, in my opinion.



I used the frosting and made it look like a patch of grass for the candy eggs to sit on top of. I used all different kinds of candy to top them. Very kid friendly these are, lol.

Easter Rice Crispy Treats

Since Easter 2013 is Tomorrow, I decided to make a few Easter Goodies...

First, I made rice crispy treats with Easter M&M's decorated to look like an Easter Egg. I used the plain chocolate M&M's since they were the smallest ones for decorating.

Instead of the rectangle shape, I use 2 9in. round cake pans and press them into. I lined the pans with wax paper so there is no sticking.

Green Mint Chocolate Cupcakes


For Saint Patrick's Day 2013 I made Chocolate cupcakes topped with Green Mint frosting. I also used silver liners to make the green frosting stand out more since they weren't a very dark green color.

Like always I make my own frosting, I used mint extract along with green food coloring. I really like how these 2 flavors really came together to give you that chocolate mint taste like a thin mint cookie would give you.

SpongeBob Sqaurepants Cake

 I have to admit that this cake was my first cake I've done using fondant ever, plus this cake was a test cake for an upcoming birthday for a special little boy. Here I used a 6 in. square cake that is just a plain white batter, since it was for a soon to be 1 yr old.

Next, I dirty iced the cake with a home made cherry frosting. Why did I use a cherry frosting for a 1 yr old's cake, well I wanted the cake to be a little sweet for him to like plus, Cherry was a flavor I have not used yet in a frosting.

For Spongebob's pants I used rice crispy treats as you can see here. I dirty iced the rice treats too since I will be covering them in fondant too. After icing them I put them in the fridge for everything to firm up so I can cover everything in fondant.

Spongebob is now yellow and has his shirt and pants on. Working with fondant for the first time was kinda of nerve racking because I did not know how fast it would dry out, but I managed to get the cake covered and also the rice treats covered in a chocolate fondant which smelled so good !

Doing the details is what took the longest in completing this cake. I put on the tie and eyes and I also did the hole intends so he looked like a sponge, which I am very happy that the fondant did not crack in any way and kept the shape very well.

SpongeBob is almost done in this picture. I used a blue edible marker for the blue part of his eyes since I could not get any blue fondant. I also used it for the little dimples by his mouth as well. All of the shapes were done by free hand.


I added his nose, arms along with the white shirt sleeves, legs with his socks, and shoes. The cake looks shiny because I had him in the fridge the night before and it was starting to warm up, which i thought it would of looked horrible, but it still looked awesome after being in the fridge. I simply just used the fondant to mold of the arms, sleeves, nose, legs, socks, and shoes.

Here is the finished cake. I used tooth picks to hold the legs & shoes together with the rice treats. I also put a tooth pick in the arms as well, I did inform my client that there was tooth picks inside as well. This cake took almost 24 hrs to complete and I can not wait to do my next cake.








Marble Fudge Valentine's Day Heart Cake

For Valentine's Day 2013 I decided to make a heart shape cake. I did the marble fudge, since I have never really used that flavor before, plus I thought it would go great with the chocolate frosting that I made to go with it.  I used an actual heart shaped pan this time rather than cutting my own from a 9in. round.

Here is the final product. I just did a plain home made chocolate frosting since the batter has fudge in it as well. For the design I did just a simple piping around the edges of the cake to give it some detail with out going over board basically. The cake tasted really good and did not last very long in the house.

Chocolate Almond Red Velvet Cupcakes

Since it is the Superbowl & Mom's birthday I did a Chocolate Almond Red Velvet Cupcakes. These are the flavors that she wanted. The frosting is frosting is a home made Chocolate & Almond. I also really like these liners too, they are very sturdy and peel away nicely.

Today, I made 2 dozen of them. Which is the most I have made so far. I have to admit that my piping skills are getting better though. I know I started out really rough in the beginning, but I am getting the hang of it, lol. The container with the 5 cupcakes have double frosting on them ( had to use up the very last bit of frosting left) and the other side has a single layer.

These were really fun to do even though I was suppose to have done them the night before. I know that these will not last very long. I have been perfecting the cooking times for each flavor and recording it (so I will remember). Soon, I will be making a dozen SpongeBob SquarePants cupcakes and a smash cake. So, look forward to seeing it completed.

Lemon Blackberry Cupcakes

These are my Lemon Blackberry Cupcakes that I have made tonight (Wednesday, Jan. 30, 13.) I have been wanting to try the blackberry in a frosting and I know that Lemon is a great combo with a lot of other great flavors. I used Blackberry jam in my home made frosting and it came out to the best consistancy that I didn't think it would come out to. The 2 flavors together really work well together and this will be a popular flavor.
